Old recipe
Make dough from fine flower, take some hot water, rose water, lots of sugar and anise, two eggs and some fresh butter. Roll it into many small and thin rolls, baked in a small iron, much like small waffles.
New recipe
Waffles are often part of a dish and are combined with other ingredients such as mascarpone and raspberries. We combine the rose water with edible leaves and rose hip liqueur.
For 4 people:
- 100 g sugar
- 1 egg
- 120 g flower
- 60 g butter
- 50 g condensed milk
- 1 tbsp. rose water
- 1 dl rose hip liqueur
- 250g mascarpone
- 3 eggs
- 80 g sugar
- 150 g raspberries
- 20 g fresh rose petals
Preparation:
Make dough by mixing all ingredients and bake into thin galettes in a waffle iron. Whisk the egg yolks and half of the sugar until fluffy, mix with the mascarpone and the rose hip liqueur, add the egg whites beaten with the rest of the sugar.
Serve the waffle with some raspberries and rose petals.
